Hi everyone! Welcome to my blog!

Every week during Quarantine I will be sharing some tips and recipes to help you stay on track during these difficult times. Mentally, this is challenging for many of us and I want you to know that there are things you can do to stay on track with your fitness goals and enjoy being in your own space. Most importantly, be kind to yourself! Constantly being hard on yourself if you eat half a pack of business or don’t manage to go out for your afternoon walk because you feel tired should NEVER lead to guilt. Self care during these times is important. Elevated stress = elevated cortisol which will affect your mood, sleep and your eating habits. No one is perfect and we all make mistakes. Just remind yourself tomorrow is a new day and you can get back on track without needing to feel guilt and shame about past behaviour.

My love for fitness is almost on a par with my love for food! I absolutely love cooking and baking, especially when I make things for friends and family. Another thing I enjoy is recreating recipes that are both delicious and healthier alternatives. Now you may be thinking beans don’t go in Brownies! But I can assure you these ones are delicious! You can even try these with Black beans, but I used Kidney Beans for these. Beans are great sources of fibre and are also a popular protein source for many plant based eaters. Kidney Bean Brownies: 
Makes 20 serves 10-12 people (depends how many you can eat!) 
Pre-Heat Oven to 180ºC. 

  • 1 can of kidney beans drained and rinsed

  • 50g dates 

  • 250ml water 

  • 50g buckwheat flour 

  • 20g coconut sugar 

  • 50g raw coconut flesh (Tiana's)

  • 25g Organic 85% dark and 25g 100% dark chocolate 

  • 2 tablespoons of cacao powder 

  • 10g flaxseed (ground) 

  • 1 teaspoon apple cider vinegar

Method:

  1.  In a food processor/ nutribullet blend the dates with water , coconut meat and kidney beans until smooth. 

  2. Pour into a mixing bowl and add the flax, cacao, vinegar, coconut sugar and flour. 

  3. Chop the dark chocolate into little pieces and add into the mix.

  4. Pour into a lined baking tray and bake for 20-25 minutes until cooked through.

  5. Serve up and dust with cinnamon, hemp seeds and cacao powder.
